This sake is crafted from Gohyakumangoku rice; a strain renowned for the crisp character of the sake it produces. Gohyakumangoku was at the forefront of the surge in popularity of dry and light sake in the 1980s and helped establish a new premium-sake dynamic. "Tanadamai" means "terraced rice" and refers to the plantings in the Hakusan mountain foothills. Try this at brunch with a cheese omelette.
