This complex Sauvignon Blanc is made with fruit from three vineyards: one known for producing wines of fullness and power; one for wines of freshness and vivacity; and one for its flinty mineral character. The resulting wine is matured for 8-10 months on the lees in a combo of concrete and oak. It'll pair beautifully with goat cheese, or salmon in a lemon-cream sauce.
